Ingredients
- 5 oz baby kale greens
- 1 apple
- 15 oz can chickpeas
- 2 tbsp bbq sauce
- 1 tbsp avocado oil
- 2 tbsp tahini
- zest of 1/2 a lemon
- 1 tbsp lemon juice
- 1 tbsp nutritional yeast
- 1 clove garlic
- 1 pinch red pepper flakes
- salt and pepper to taste (optional)
- 1/4 cup water
Steps
- Drain and rinse the chickpeas, then toss them with the barbecue sauce and avocado oil.
- Whisk the tahini, lemon zest, lemon juice, nutritional yeast, garlic, red pepper flakes, and water.
- Season the dressing with salt and pepper.
- Slice the apple thinly and place it with the baby kale in a large bowl.
- Add the chickpeas and dressing, then toss until the greens are evenly coated.
