2 lb italian eggplants
1/4 cup tahini
3 tbsp lemon juice
2 tbsp extra-virgin olive oil (optional)
2 tbsp chopped fresh flat-leaf parsley (optional)
2 cloves garlic
3/4 tsp salt
1/8 tsp each ground cumin

Steps

Heat the oven to 450 F.
Roast the whole eggplants on a baking sheet for 35 minutes, turning once, until very soft.
Cool the eggplants for 10 minutes, then split them and scoop the flesh into a bowl.
Mash the eggplant with tahini, lemon juice, garlic, salt, cumin, parsley, and olive oil until combined.
