2 onions
1 cup buttermilk
1/2 cup panko breadcrumbs
2 tbsp yellow cornmeal
1/2 cup all-purpose flour
1 tbsp cajun seasoning
2 egg whites
nonstick spray oil

Steps

Slice the onions into rings and soak them in buttermilk for 30 minutes.
Whisk the egg whites in a shallow bowl.
Mix the flour, panko, cornmeal, and Cajun seasoning in a second shallow bowl.
Dip each onion ring in egg whites, coat it in the crumb mixture, and place the rings on a tray.
