Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 tsp kosher salt
  • 8 tbsp 1 stick cold unsalted butter
  • 1 tbsp apple cider vinegar
  • 9 oz mexican-style pork chorizo
  • 1 large sweet potato
  • 4 large eggs
  • 3/4 cup heavy cream
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 6 oz aged white cheddar cheese
  • 1/4 cup finely chopped cilantro

Steps

  1. Heat the oven to 400 F, pierce the sweet potato, and bake it on a baking sheet for 30 minutes until tender.
  2. Mix the flour and salt, cut in the cold butter, add the vinegar and enough water to form dough, then chill it for 20 minutes.
  3. Cook the chorizo in a skillet over medium heat for 8 minutes, breaking it apart until no pink remains.
  4. Roll the dough into a 9-inch circle, press it into a 9-inch pie pan, and bake it at 400 F for 12 minutes.
  5. Peel and cube the sweet potato, then whisk the eggs, cream, salt, pepper, cheddar, and cilantro in a bowl.
  6. Spread the chorizo and sweet potato in the crust, pour in the egg mixture, and bake at 350 F for 45 minutes until the eggs are firm.
  7. Cook sausage until it reaches 160 F inside.
  8. Cool the quiche for 10 minutes before cutting.
