Ingredients

  • 2 cans (15 oz) chickpeas
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp kosher salt
  • 1 tsp freshly ground black pepper
  • 1/4 cup grated parmesan cheese

Steps

  1. Heat the oven to 425 F.
  2. Drain and rinse the chickpeas, then pat them dry.
  3. Toss the chickpeas with olive oil, salt, and pepper.
  4. Spread them on a large baking sheet and roast for 25 minutes, shaking once.
  5. Sprinkle Parmesan over the chickpeas and roast for 5 more minutes.
