1/2 cup uncooked split red lentils
2 cups water
1 1/2 tbsp sugar
1 pinch salt
1/2 tsp cinnamon
1/2 tsp vanilla extract
1 tbsp maple syrup
3 tsp oil
1/2 tsp baking powder
2 tbsp shredded coconut
2 tbsp or more seeds
3 tbsp dried cranberries

Steps

Simmer the lentils in 2 cups water over medium heat for 15 minutes, then drain well.
Heat the oven to 325 F and spread the lentils on a baking sheet.
Mix sugar, salt, cinnamon, vanilla, maple syrup, oil, and baking powder in a bowl.
Stir the mixture into the lentils, then mix in coconut and seeds.
Bake for 25 minutes, stirring once halfway through.
Cool for 5 minutes, then stir in the dried cranberries.
