Ingredients

150 ml / 5 oz egg whites
1 cup caster sugar
1 tbsp cornflour / cornstarch
1 tsp white vinegar
1 1/2 cups thickened cream / heavy cream
1/4 cup caster sugar
1 tsp vanilla extract or essence
fruit of choice. i used: raspberries

Steps

Heat the oven to 250 F and line a baking sheet with baking paper.
Beat the egg whites in a clean bowl until soft peaks form, then gradually beat in the caster sugar until glossy and stiff.
Fold in the cornstarch and vinegar, spread the meringue into a 9-inch round, and make a shallow dip in the center.
Bake the meringue for 75 minutes, then turn off the oven and let it cool inside for 15 minutes.
Beat the cream, remaining caster sugar, and vanilla until soft peaks form.
Top the cooled meringue with the whipped cream and raspberries.
