Ingredients
- 2 tbsp extra-virgin olive oil
- 1 lb sliced cremini mushrooms
- 12 oz cauliflower gnocchi
- 1 jar (15 oz) mushroom alfredo sauce
- 2 1/2 cups fresh baby spinach
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the mushrooms and cook for 5 minutes, stirring until softened.
- Stir in the gnocchi, Alfredo sauce, and 1/2 cup water.
- Cover the pot and simmer for 7 minutes, stirring once or twice.
- Add the spinach and cook uncovered for 2 to 3 minutes until wilted and the gnocchi is tender.
- Season with salt and pepper, then serve hot.
