- 25 whole button mushrooms
- 1/2 cup dry quinoa
- 3/4 cup broth or water
- 3 hot italian chicken sausage links
- 1/2 cup minced onion
- 2 cloves garlic
- 5 button mushrooms
- 2 tbsp garlic powder
- 1/4 tsp sea salt
- 1/4 tsp paprika
- salt and pepper (optional)
Steps
- Heat the oven to 375 F and arrange 25 mushroom caps in a baking dish.
- Rinse the quinoa, combine it with the broth or water in a small saucepan, and simmer covered for 15 minutes.
- Remove the sausage from its casings, chop five mushrooms, and mince the onion and garlic.
- Cook the sausage, chopped mushrooms, onion, and garlic in a skillet over medium heat for 8 to 10 minutes.
- Stir in the cooked quinoa, garlic powder, salt, and paprika, then cook for 2 minutes.
- Fill the mushroom caps and bake for 18 to 20 minutes, until the chicken sausage reaches 165 F.
