Ingredients

  • 1 1/2 cups espresso or very strong black coffee
  • 1 cup baileys irish cream
  • 2 large eggs
  • 16 oz mascarpone cheese
  • 2 1/2 tsp natural unsweetened cocoa powder

Steps

  1. Stir the coffee and Irish cream in a shallow bowl.
  2. Whisk the eggs and sugar in a heatproof bowl over gently simmering water until thick and 160 F, about 6 minutes.
  3. Remove the bowl from the heat, cool the egg mixture for 3 minutes, and fold in the mascarpone.
  4. Dip the ladyfingers briefly in the coffee mixture and arrange half in a 9-inch square dish.
  5. Spread half the mascarpone mixture over the biscuits, repeat the layers, and dust the top with cocoa powder.
  6. Chill the tiramisu for 5 minutes before serving.
