3 lb medium red potatoes
5 strips bacon
1 onion
1/4 cup all-purpose flour
2 tsp salt
1/4 tsp celery seed
1/4 tsp pepper
5/8 cups sugar
1 cup cider vinegar
3/4 cup water
3 tbsp minced fresh parsley

Steps

Place the potatoes in a large pot, cover them with water, and boil for 20 to 25 minutes until tender.
Cook the bacon in a large skillet over medium heat for 8 to 10 minutes, then chop it and reserve 3 tablespoons of drippings.
Cook the onion in the bacon drippings over medium heat for 4 minutes until soft.
