Ingredients
- 2 oranges
- 1 1/4 tsp baking powder
- 6 large eggs
- 1 1/4 cups white sugar
- 2 3/4 cups almond meal / ground almonds
Steps
- Place the whole oranges in a saucepan, cover them with water, and simmer for 30 minutes.
- Drain and cool the oranges for 10 minutes, then remove the seeds and blend the fruit until smooth.
- Heat the oven to 350 F and grease a 9-inch springform pan.
- Beat the eggs and sugar until combined, then mix in the orange puree, almond meal, and baking powder.
- Pour the batter into the pan and bake for 45 minutes, until the center is firm and the eggs are fully set.
- Cool the cake in the pan for 10 minutes before removing it.
