Ingredients
- 6 slices bacon
- 4 tbsp unsalted butter
- 2 large leeks
- 2 cloves garlic
- 1/4 cup all-purpose flour
- 2 lb russet potatoes
- 4 cups chicken stock
- 1 cup whole milk
- 1 cup heavy cream
- 2 tsp kosher salt
- 1/2 tsp freshly cracked black pepper (optional)
- 1/2 cup grated sharp white cheddar cheese (optional)
- 3 green onions (optional)
Steps
- Cook the bacon in a large pot over medium heat for 6 minutes until crisp, then transfer it to a plate.
- Melt the butter in the pot, add the leeks and garlic, and cook for 6 minutes until softened.
- Whisk in the flour and cook for 1 minute.
- Add the potatoes and chicken stock, then simmer uncovered over medium heat for 20 minutes until tender.
- Stir in the milk, cream, salt, and pepper, and simmer for 4 minutes without boiling.
- Blend the soup until smooth, stir in the cheddar and bacon, and heat for 3 minutes.
