Ingredients
- 227 g clotted cream
- 25 g butter
- 1 tsp corn flour
- 100 g parmesan cheese
- grated nutmeg
- 250 g fettuccine
- chopped parsley
Steps
- Boil the fettuccine in salted water until tender, then reserve 1 cup cooking water and drain.
- Melt the butter in a large skillet over medium heat.
- Whisk the corn flour with 2 tablespoons of cooking water until smooth.
- Add the clotted cream and corn flour mixture to the skillet, then simmer for 3 minutes.
- Stir in the Parmesan and nutmeg until smooth, adding cooking water if needed.
- Toss in the fettuccine and parsley, then cook for 2 minutes.
