Ingredients
- 500 g baby new potatoes
- 4 egg
- 225 g green beans
- 225 g chorizo
- 1 clove sliced garlic
- 2 tbsp sherry vinegar
- 2 tbsp chopped parsley
Steps
- Boil the potatoes in a large pot of water for 18 minutes, until tender.
- Add the eggs during the last 10 minutes, then transfer them to cold water and peel them.
- Boil the green beans in the same pot for 5 minutes, then drain everything.
- Cook the chorizo and garlic in a 12-inch skillet over medium heat for 8 minutes.
- Cook sausage until it reaches 160 F inside.
- Toss the potatoes and beans with the vinegar, then top with sliced eggs, chorizo, and parsley.
