Ingredients
- 16 flour tortillas
- 1 1/5 lb chicken thighs
- 1 tbsp olive oil
- 3 tbsp mexican spice mix
- 1 red onion
- 4 cloves garlic
- 1/2 cups sweet corn
- 1/2 cups tomatoes
- 1 tbsp tomato paste
- 3 tbsp light cream cheese
- 1/2 tsp salt
- 1 avocado
- 1 1/4 cups cherry tomato
- 1 jalapeno
- 1/4 cups coriander chopped
- 1/2 lime juice
- 1 pinch salt and pepper
- light sour cream
- 1 1/4 cup shredded mozzarella cheese
- 1 1/4 cup shredded cheddar cheese
Steps
- Heat the oven to 375 F and press the tortillas into 16 muffin-pan cups.
- Cut the chicken thighs into small pieces and cook them in oil over medium heat for 8 minutes, until they reach 165 F.
- Add the onion, garlic, corn, tomatoes, tomato paste, Mexican spice mix, salt, and cream cheese, then cook for 5 minutes.
- Fill the tortilla cups with the chicken mixture and top them with mozzarella and cheddar.
- Bake the cups for 12 minutes, then top them with avocado, cherry tomatoes, jalapeno, coriander, lime juice, sour cream, salt, and pepper.
