Ingredients
- 1 lb chicken breasts
- 1 tsp salt
- 1/4 tsp black pepper
- 1 lb asparagus
- 2 cups heavy whipping cream
- 4 tbsp pesto sauce
- 4 tbsp olive oil
- 12 oz fettuccini pasta
Steps
- Bring a large pot of salted water to a boil and cook the fettuccine until tender, about 10 minutes.
- Cut the chicken into bite-size pieces and season it with salt and pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat and cook the chicken for 6 to 8 minutes, until it reaches 165 F.
- Add the remaining olive oil and asparagus, then cook for 4 minutes.
- Stir in the cream and pesto and simmer for 3 minutes.
- Drain the pasta and toss it with the chicken, asparagus, and pesto sauce.
