1 lb lean ground turkey
1 small white onion
2 cloves garlic
1 egg
1/2 cup italian style panko bread crumbs

1/2 tsp cayenne pepper
1/2 tsp fresh cracked black pepper

Steps

Microwave the sweet potato for 6 to 8 minutes until soft, cool it briefly, and scoop out the flesh.
Heat a covered grill to 400 F, using an area for indirect cooking.
Mix the turkey, onion, garlic, egg, breadcrumbs, cumin, cayenne, pepper, salt, and sweet potato in a large bowl.
Shape half the mixture into a 7-by-4-inch loaf, place the cheddar in the center, and cover it with the remaining mixture.
Grill the loaf over indirect heat for 30 to 35 minutes, brushing it with barbecue sauce during the last 10 minutes.
Rest the meatloaf for 5 minutes, then check that the center reaches 165 F.
