- 1 tbsp butter
- 8 slices bacon
- 1 small onion
- 1 lb collard greens
- 2 cloves garlic
- 1 1/4 cups chicken broth
- salt and black pepper (optional)
Steps
- Melt the butter in a large pot over medium heat.
- Cook the bacon for 8 minutes until crisp, then transfer it to a plate.
- Cook the onion in the pot for 5 minutes until softened.
- Add the garlic and cook for 1 minute.
- Stir in the collard greens and chicken broth.
- Cover and simmer over low heat for 35 minutes until tender.
